Whether hand raked or machine harvested, Wild Blueberries are sorted, cleaned and processed within hours of being picked, using state-of-the-art technology to reserve their flavor, quality and antioxidant capacity.
1 can Wyman's Wild Blueberries, drained
1 tablespoon tapioca
1 teaspoon lemon juice
1/2 cup oatmeal
1/4 cup flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup butter, melted
1/4 cup brown sugar
2 tablespoons white sugar
Preheat oven to 350 degrees F.
Combine the drained berries, tapioca and lemon juice in a 1 quart casserole dish. Mix well and let sit for 10 to 15 minutes.
In a medium sized bowl combine the remaining ingredients. Smooth the oatmeal mixture on top of the berries covering it completely.
Bake at 350 degrees for 25 to 30 minutes or until golden brown on top.
Recipe may be doubled (use an 8" x 10" casserole dish).
