One of only three berries native to North America, the Wild Blueberry (vaccinium angustifolium) thrives in the glacial soils and northern climate found in the fields and barrens of Downeast Maine and Canada.
1 can Wyman's Wild Blueberries, drained
2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup white sugar
1/4 teaspoon cinnamon
6 ounces orange yogurt
4 tablespoons butter, melted
1/3 cup orange juice
2 eggs beaten
Zest from one orange (optional)
1 Tablespoon flour to coat drained blueberries
Preheat oven to 375 degrees F.
Stir 2 cups flour, baking powder, salt, sugar and cinnamon together in a large bowl.
In another mediums size bowl combine yogurt, butter, orange juice and eggs. Stir yogurt mixture into flour mixture. Stir until just moistened.
Dust drained blueberries with 1 tablespoon four. Fold into muffin mixture. Spoon into paper lined muffin tins.
Bake at 375 degrees F. for 15 to 18 minutes.
