All it takes is a half-cup of Wild Blueberries to deliciously satisfy one of your recommended 5 A Day servings. That's a smaller helping than you think. And since Wild Blueberries are available fresh or frozen year-round in your supermarket, getting your Daily Dose of Blue (tm) is easy.
1 1/4 cups corn meal
1 cup unsifted flour
1/4 cup sugar
1 teaspoon soda
1/2 teaspoon salt
1/4 cup packed brown sugar
1 egg
1 cup buttermilk
3/4 cup canola oil
1 1/2 cups Wyman's Fresh Frozen Wild Blueberries.
Preheat oven to 435 degrees F.
In a bowl, stir together corn meal, flour, sugar, soda, salt and brown sugar. In a second bowl, whisk egg with buttermilk and oil. Add liquid to dry ingredients all at once, stirring until blended. Fold in blueberries. Spoon into well-greased muffin pans, filling about 3/4 of the way full.
Bake for 20 minutes or until a golden brown.
