Recipes: Sara Wyman’s Blueberry Muffins

Sift into a mixing bowl:

1 3/4 cups flour
1 teaspoon soda
2 teaspoons cream of tartar
1/3 cup sugar
1 teaspoon salt

Other ingredients:

1 medium egg
Abt 1 cup milk
1/3 cup melted shortening
1 cup Wyman wild blueberries (drained from Wyman's 15 oz can or use Wyman's frozen

• Preheat oven to 400 degrees F (204 degrees C)
• Break one egg into a measuring cup
• Fill the cup with milk
• Add egg and milk to the sifted ingredients
• Add melted shortening to the sifted ingredients and mix lightly
• Fold in frozen or drained wild blueberries
• Spoon into 12 greased muffin pans
• Bake at 400 degrees F for 20 to 30 minutes (may be slightly more when using frozen berries)
