Time: 15 minutes + Overnight soak time
- In a small blender combine 1/4 cup of the cherries, 1 1/2 cups coconut milk, 1/2 tsp vanilla, 1 tsp honey and a pinch of salt. Blender until well combined.
- Pour the coconut milk mixture into a sealable container. Add 3 tbsp of chia seeds and stir well. Cover and set aside.
- In another sealable container, combine 1 1/2 cups coconut milk, 1/2 tsp vanilla, 1 tsp honey, 3 tbsp chia seeds and a pinch of salt. Stir until well combined and cover. Refrigerate both containers overnight.
- When ready to eat, alternate layers between the two chia seed mixtures and top with the remaining cherries. Eat immediately or store in refrigerator for up to four days.
