Overnight Tart Cherry Chia Pudding

Serves 4
Time: 15 minutes + Overnight soak time

Ingredients:

Instructions:

  1. In a small blender combine 1/4 cup of the cherries, 1 1/2 cups coconut milk, 1/2 tsp vanilla, 1 tsp honey and a pinch of salt. Blender until well combined.
  2. Pour the coconut milk mixture into a sealable container. Add 3 tbsp of chia seeds and stir well. Cover and set aside. 
  3. In another sealable container, combine 1 1/2 cups coconut milk, 1/2 tsp vanilla, 1 tsp honey, 3 tbsp chia seeds and a pinch of salt. Stir until well combined and cover. Refrigerate both containers overnight. 
  4. When ready to eat, alternate layers between the two chia seed mixtures and top with the remaining cherries. Eat immediately or store in refrigerator for up to four days.

**Coconut milk will provide a creamier texture
