Recipe by Kailee Walters (@kaileeinthekitchen) for Wyman's
Ingredients:
- 1 cup full fat coconut milk
- 1 cup (140g) Wyman's Frozen Mango Chunks
- ½ cup (75g) chopped orange bell pepper
- 2 cups (200g) chopped cauliflower
- 1 clove garlic, minced
- 1 tsp paprika
- ½ tsp jerk seasoning
- ½ tsp salt
- ¼ tsp cumin
- Cilantro to garnish
Directions:
- Add cauliflower, bell pepper and garlic to a pan over medium heat with 2 tbsp water, steam for 10 minutes or until water is evaporated
- Remove pan from heat and allow to cool
- Blend mango, coconut milk and spices until smooth
- Add the cooled cauliflower to the blend and blend until smooth
- Heat over a stove until warm – or enjoy as a cool, refreshing soup
- Serve with a toasted piece of sourdough and a bit of cilantro!
