Recipe by Jen Bates for Wyman's
Ingredients:
- 4 cups Wyman’s Tropical Berry & Coconut, thawed
- 1 can coconut milk
- 3⁄4 cup uncooked quinoa
- 2 tbsp lime juice
- 1 tbsp honey (optional)
- Pinch of salt
Directions:
Rinse the quinoa and add to a pot. Cook according to quinoa package directions, except replace water with the can of coconut milk. Top off with water while cooking as necessary.
If serving hot: Remove quinoa from heat once cooked, mix in remaining ingredients and serve immediately.
If serving cold: Remove quinoa from heat. Mix in everything except Wyman’s Tropical Berry & Coconut. Chill for at least 2 hours. Mix in thawed Tropical Berry & Coconut before serving.
