DIY Just Fruit Cups

Prep time: 10 minutes
Ready in: 2 hours 10 minutes, including freezing time
Serves: 2

Ingredients:

  • 1 cup frozen Wyman’s Wild Blueberries
  • 1 cup frozen Wyman’s Strawberries, 1/2-inch diced
  • 1 barely ripened banana, peeled
  • 1/2 teaspoon no-cook fruit pectin
  • Optional toppings: chocolate chips, shredded coconut, peanut butter, granola, chia seeds, whipped cream, or honey

Directions:

  1. Line a baking sheet with parchment paper. Blend banana and pectin in a food processor until just blended. Transfer blended banana mix to a piping bag with a small hole cut off the tip.
  2. Pipe dots of pureed banana, about the size of a pea, onto the prepared baking sheet.
  3. Freeze banana dots for 1-2 hours, or until frozen.
  4. Divide wild blueberries, strawberries, and banana dots evenly among serving bowls.
  5. Top with chocolate chips, coconut, peanut butter, granola, chia seeds, whipped cream, or honey as desired and serve.

Tip: To keep banana dot colors bright, it is best to use a barely ripened banana (with a little green at the tip and bottom).


Tip: Use Greek yogurt as a base for the fruit and toppings instead of creating frozen banana dots.
