Ingredients:
- 1 cup frozen Wyman’s Wild Blueberries
- 1 cup frozen Wyman’s Strawberries, 1/2-inch diced
- 1 barely ripened banana, peeled
- 1/2 teaspoon no-cook fruit pectin
- Optional toppings: chocolate chips, shredded coconut, peanut butter, granola, chia seeds, whipped cream, or honey
Directions:
- Line a baking sheet with parchment paper. Blend banana and pectin in a food processor until just blended. Transfer blended banana mix to a piping bag with a small hole cut off the tip.
- Pipe dots of pureed banana, about the size of a pea, onto the prepared baking sheet.
- Freeze banana dots for 1-2 hours, or until frozen.
- Divide wild blueberries, strawberries, and banana dots evenly among serving bowls.
- Top with chocolate chips, coconut, peanut butter, granola, chia seeds, whipped cream, or honey as desired and serve.
Tip: To keep banana dot colors bright, it is best to use a barely ripened banana (with a little green at the tip and bottom).
Tip: Use Greek yogurt as a base for the fruit and toppings instead of creating frozen banana dots.
