Healthier Strawberry Pop Tarts

Serves: 5 

Ingredients:

For the strawberry filling: 

For the dough:

  • 1 3/4 cups self-rising flout** 
  • 1 cup full fat plain Greek yogurt  
  • 2 tbsp granulated sugar 
  • 2 tbsp milk of choice 
  • 1 egg, whisked  
  • ½ cup sprinkles, optional 

For the glaze:

  • 1/2 cup confectioner's sugar 
  • 1 teaspoon vanilla extract 
  • 1-2 tsp milk of choice (add more or less depending on desired consistency)  

** How to make self-rising flour from scratch 

  • 2 cups all-purpose flour 
  • 1/4 tsp salt 
  • 1 tbsp baking soda  

Directions:

For the strawberry filling:

  1. Add sugar and strawberries to a medium saucepan over medium heat. Bring the strawberries to a boil, stirring continuously. Once boiling, add the lemon juice and lemon zest.
  2. Continue boiling for about 15 minutes over low heat, stirring often. Remove from the heat, let cool, and pour into a jar. Cover and refrigerate for up to two weeks.  

 For the pop tarts:

  1. Preheat the oven to 350 degrees F. Line a large baking tray with parchment paper and set aside. 
  2. In a large mixing bowl, combine flour and yogurt. Using your hands, combine the dough to form a ball shape. 
  3. Flour a kitchen surface and dust dough with additional flour. Knead the dough several times on the floured surface. 
  4. Using a rolling pin, roll out the dough, forming a rectangular shape, about 12 inches by 6 inches. Use a knife or pizza cutter to cut the dough in 10 even pieces. Separate each piece and roll out once more using a rolling pin.   
  5. Place 5 of the rectangles on the lined baking tray, evenly spaced apart. Place about 1-2 tablespoon of jam onto each rectangle and then lay the remining 5 rectangles on top.  
  6. Use a fork to crimp the edges together on all sides. Brush with egg. 
  7. Bake the pop tarts for 15-20 minutes, or until golden on top. Allow pop tarts to completely cool.  
  8. While the pop tarts are cooling, prepare your glaze by combining the confectionary sugar with the vanilla extract and milk. Whisk until well combined. Add more or less milk depending on desired consistency. Spoon the glaze over each pop tart and let rest until the glaze has hardened. Top with sprinkles, if desired. 

This healthier twist on a childhood favorite packs all the flavor without all the sugar & fat! Instead of oil, Greek yogurt is utilized in the crust which reduces the total calories and provides an added boost of protein! They are equally as delicious as the original and loaded with berry flavor!
