Raw Cherry & Wild Blueberry Layered Cheesecake Bars

Yields: 16 cake bars

Total Time: 3 hours & 15 minutes (15 minute prep time, 3 hour freeze time)

Ingredients:

For the Cherry Layer:

For the Blueberry Layer:

  • 1 ½ cups frozen Wyman's Wild Blueberries
  • 1 cup cashews, soaked overnight
  • 1 tbsp unsweetened applesauce
  • 3 tbsp lemon juice 
  • 1 tbsp all natural maple syrup
  • ¼ tsp sea salt

For the White Layer:

  • 1 cup cashews, soaked overnight
  • 1 tbsp unsweetened applesauce
  • 3 tbsp lemon juice 
  • 1 tbsp all natural maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp sea salt

For the Date Crust Base:

  • 2 ½ cups walnuts
  • 6 large pitted medjool dates
  • 2 tbsp all natural applesauce
  • 1 tbsp all natural maple syrup
  • ¼ tsp sea salt

Topping:

  • ½ cup desiccated coconut shreds

Directions:

  1. Set 3 cups of cashews in a large bowl and cover with water to let soak overnight. 
  2. Once soaked overnight, divide the cashews into thirds, and set aside in 3 bowls.
  3. Place all ingredients for the date crust base into a food processor or study blender, and process until a crumbly, sticky dough has formed. While blending, stop to scrape the sides of the processor or blender to assure the crust achieves an even consistency. 
  4. Once an even crust consistency has been achieved, line a 9” x 9” baking tray with parchment paper, assuring to leave 2” of the parchment paper laying out from the baking tray, to serve as the handles when removing the cakes from the pan. Place crust in the center of  the lined pan, and in order to evenly distribute the crust, place an additional sheet of parchment paper on top and smooth out to the corners of the pan, either by using hands or a rolling pin.  
  5. Once the crust has been set, place all of the ingredients for the cherry cheesecake layer into a food processor or blender, and blend until a smooth consistency. Pour cherry mix upon the date crust, and evenly smooth over the mix with a spatula. Place to freeze for 1 hour.
  6. Once the cherry layer has hardened, place all ingredients for the blueberry layer into a food processor or blender, and blend until a smooth consistency. Spread blueberry mix evenly out upon the cherry layer with a spatula, and place the pan back to freeze for 1 hour.
  7. Once the blueberry layer has hardened, place all ingredients for the white layer into a food processor or blender, and blend until a smooth consistency. Spread white mix evenly out upon the blueberry layer with a spatula, sprinkle on top the desiccated coconut, and place the pan back to freeze for 1 final hour. 
  8. Once the final layer has hardened fully, slice into 16 bars and enjoy!

To store, freeze in an airtight container.
